Banana Bread: An a-peeling recipe
Updated: Sep 10
A healthy version of one of our favorites!
I often have a few extra ripe bananas each week that I either freeze for smoothies or bake into an easy treat. Here is one easy treat for you to try next time you have some over ripe 'nanners in your fruit bowl! Preheat oven to 350 °F
Mix All Ingredients In One Bowl:

4 Extra Ripe Bananas 1/4 Cup Organic Almond Butter (no added sugar or salt) 2 teaspoons Vanilla 1/2 Cup Real Maple Syrup 1/4 Cup Avocado Oil (might need more at the end if its a little too thick) (MIX) 1 teaspoon Cinnamon 2 teaspoons Baking Soda 1 teaspoon Baking Powder
Pinch of Himalayan Sea Salt 1/4 Cup Ground Flax Seed 2 Cups Organic Whole Wheat or Gluten Free All Purpose Flour 2 Scant Cups Organic Rolled Oats 1 Cup Walnuts (MIX)
If the batter appears a little too thick, feel free to add a table spoon or two of avocado oil to thin out.

-Grease a 9x12 glass baking dish with coconut oil or butter. -Pour banana bread batter into dish and use spatula to even out throughout dish. -Top with more nuts if desired! (I topped with walnuts and sprinkled a little dusting of cinnamon.) -Place is oven at 350 °F for 30-40 minutes. -Remove from oven and let cool! Let me know if you enjoy this recipe!
